When we lived in Oregon, I was the Director of an after-school Kindergarten Program.  At Christmas, one of the parents presented me with a lovely thank you basket full of red and green fruits and vegetables.  It is still one of my all-time favorite gifts because it was so thoughtful, creative, and yummy.  So today, I thought I would share some recipes that incorporate red or green fruits and vegetables…a lovely and yummy way to add some healthy changes to your celebrating:
